CHICKEN CUTLETS (KOTLETI) RECIPE
This is super easy Chicken Cutlets or Kotleti Recipe. Russian Chicken Cutlets is a dish, I bet you have never had before.
I guess I just gave you an idea for your dinner tonight! They are so juice and meaty inside and nice and crispy outside, just a perfect combination! Goes nicely with rice, salad or mashed potatoes.
Russian cutlets are very easy to make and are absolutely delicious! You can make as many as you like and just keep the rest in your fridge for tomorrow. The leftovers are as yummy as fresh ones. This recipe makes around 20 chicken cutlets.
Ingredients
1 kg of chicken breasts
1 onion
2 garlic cloves
1 egg
1-3 tbsp of milk
3 small pieces of white bread ( no crust)
100 gr of butter
salt & pepper
breadcrumbs
Directions
Step 1 : Cut your onion nice and fine. In a pan add your butter and straight away add your onion. We don't want the butter to burn. Then add your chopped garlic and cook for about 5-10 min until it becomes golden. Add salt and pepper.
Step 2 : In a small bowl add your white bread ( you can use old stale bread also), add milk and leave it to soften.
Step 3 : In a large bowl, add your minced chicken. ( Use food processor to chop chicken breasts or do it by hand) , add your eggs, bread and milk, onion and butter mixture. Season again with salt and pepper per your taste. Mix everything really well. I like to use a potato masher, that gets all the ingredients mixed in well.
Step 4 : Place the mixture into fridge for 30 min, so its sets and is easier to work with later.
Step 5 : In a small bowl add some water and place some breadcrumbs on a plate.
Step 6 : Wet your hands, take about 1 tbsp of the chicken mixture roll in hands and dip into breadcrumbs from both sides. It will be very gentle, so place them straight into a frying pan. Make sure you frying pan is nice and hot and has oil, so they dont burn.
Step 7 : Fry them on both sides on low/ medium heat for about 5-8 min.
Step 8 : Serve them with rice, buckwheat, pasta or potatoes. They keep well in a fridge for 3 days. Enjoy!
