MINI BERRY MERINGUE NESTS
Crisp meringue "nests" filled with delicious whipped cream and topped with fresh berries and chocolate makes perfect dessert.
They are also really easy to make and most of the elements can be made ahead of time, which means that when the time rolls around when everyone is ready for an dessert, all you need to do is whip up some cream and spoon the filling into the nests.
Add different berries, melted chocolate and you're done!
Meringues are one of my favorite cookies.
I love their crisp texture that turns marshmallowy as it dissolves in your mouth.
This is a dessert that should be assembled just before serving.

Ingredients
For the meringue
4 free-range eggs, whites only
100 gr caster sugar
For the filling
250 ml double cream
2 tbsp icing sugar
1 tsp of Vanilla extract
Fresh berries
Directions
Step 1 : For the meringue, preheat the oven to 100C or 200F. Line a baking tray with baking parchment. You may want to draw circles on the paper to help keep your meringues the same size.
Step 2: Place the egg whites into a clean glass or metal bowl and whisk until soft peaks form when the whisk is removed. Gradually add the sugar and continue to whisk until stiff peaks form when the whisk is removed.
Step 3 : Spoon into a piping bag fitted with a large plain or star nozzle. Pipe into small rounds onto the prepared baking tray. Place in the oven and bake for 20 minutes.
Step 4: Turn the oven off but leave the meringues in the oven for at least an hour.
When crisp, remove from the oven.
Step 5 : For the filling, whisk the cream, vanilla extract and icing sugar together until soft peaks form when the whisk is removed.
Step 6 : Place a meringue onto a serving plate. Spread the whipped cream lightly over the meringue to cover totally, and top with berries. Decorate with melted chocolate if you like. Enjoy!
