ORANGE & RASPBERRY CAKE ( RAW VEGAN)

Today I have something very easy, summery and healthy for you!
This amazing raw cheesecake is to die for! It requires no baking either It is really fresh, vibrant and delicious.
This is one dessert that is seriously hard to mess up.
This cheesecake is raw, meaning that all the powerful vitamins, minerals, and enzymes present in the whole foods you use to make the cake remain in tact.
Instead of an atom bomb of empty calories in your belly, you actually have a handful of fruit and nuts. Perfect for the summer! Enjoy!
Ingredients
For the crust:
240 gr OR 2 cups raw nuts ( Feel free to use any nuts you like, I used walnuts and almonds together)
150-175 gr OR 1 cup dates or raisins
pinch of salt
Orange Cheesecake:
420 gr OR 3 cups cashews
180 ml OR 3/4 cup fresh orange juice
160 ml OR 1/2 cup agave/maple syrup
100 gr OR 1/2 cup melted coconut oil
1 lemon (juice of one lemon)
zest of all the oranges you juiced
pinch of salt
Raspberry Layer:
200-230 gr OR 2 cups raspberries
2-3 tbsp of the orange cheesecake mixture
2-3 tbsp of honey ( optional)

Directions
Step 1 : First, we are going to make the crust. In a food processor blend your nuts and dates/raisins mixture until the nuts have become crumbs and the mixture sticks together when you press it. Press into the bottom of a springform pan and put in the fridge.
Step 2 : To make the orange cheesecake: place all the ingredients inside the food processor. Blend until you get nice creamy consistency. Reserve 3-4 tbsp of this cheesecake mixture for the raspberry layer.
Step 3 : Add strawberries and raspberries to the crust, then pour the cheesecake mixture, spread it evenly and put in the freezer for 30 min.
Step 4 : To make the raspberry layer, blend all your raspberries together with the extra cheesecake mixture until smooth. You can add extra honey to make it sweeter. Then pour it onto the cheesecake , decorate with fresh fruit and place in the freezer overnight. This is best after 2 days (and not frozen, of course) enjoy with sliced oranges and raspberries!
