Have you every eaten this thing before? There isn't really a good English name for it, so we just call it okonomiyaki. Sometimes people call it "Japanese pancake". I don't think that's name is good enough, though!
The Japanese word translates to "okonomi" or "what you prefer/like" and "yaki" means "grill". Basically, "grill whatever you want". Okonomiyaki is usually made of flour which is made from a type of yam called "nagaimo" mixed with eggs, water, dashi (broth made from tuna and kelp), and other ingredients such as green onion, konjac, and sometimes cheese. A main ingredient is thinly cut cabbage. This is mixed with various kinds of meat (usually pork belly), or seafood (squid, octopus, shrimp, etc.). Some common toppings include sauce, mayonnaise, and katsuoboshi (dried tuna shavings). There are many variations and you can make it as you want!
