I bought a lot of carrots yesterday so I decided to bake carrot cake. I haven't baked it for a long time.
In addition, I was in the mood for it. It was so good with nutty texture and aromatic flavor.
Ingredients:
Wet ingredients:
175g melted salted butter
80-100g brown sugar
3 eggs
1 teaspoon vanilla essence
Dry ingredients
200g all purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
1/2 teaspoon nutmeg powder
Others
175g grated carrots
100g raisins
100g roasted walnuts
Method:
- Preheat oven at 170 degree Celsius.
- Sift all dry ingredients and combine into a bowl. Leave aside.
- Whisk melted butter together with sugar in another bowl. Add one egg at a time then add vanilla essence.
- Pour the dry ingredients into the wet ingredients.
- Stir in grated carrots, raisins and walnuts. Mix them well.
- Pour into cake pan.
- Bake for 40-45 minutes.
