Fresh, delicious, light and packed with amazing flavor coming for the freshest whole foods. I hope you are all hungry for a healthy, antioxidant-rich salad, 'cause that's what's on the menu today.
Arugula is by far my most favorite salad. Though many people don't fall for its peppery, spicy taste, we love it! It is packed with so much plant goodness.... and compared with other lettuce variations, arugula actually has some flavor hehe.
No really, I always thought salads were boring until I discovered a few salad flavor hacks such as arugula, peanut butter dressing, avocado, seeds, nuts, and so much more wonderful plant-foods that add crunch, color and flavor.
And the salads freshness was more than welcome on this hot tropical day. All the refreshing popsicles I made the other day are gone, but that's a good excuse to make some more!!! I know I know, it's more a kid's snack, but what the heck grown ups can be popsicle lovers too ;) I sure am! And I love it!

Ingredients (serves 2)
For the balsamic vinaigrette
1/2 orange, juice only
1 tbsp balsamic vinegar
2 tbsp extra-virgin olive oil
Black pepper and sea salt to taste
For the salad
3-4 cups packed arugula (rocket lettuce)
1 cup raw red beet, julienned
1/4 cup finely chopped spring onion
1/2 cup halved cherry tomatoes
1 orange, peeled, segmented and chopped into bite-size pieces
2-4 tbsp pumpkin or sunflower seeds (or other seeds or nuts of your choice), raw or toasted
Directions
- In a small bowl, whisk together all vinaigrette ingredients. Set aside.
- In a large salad bowl, combine all salad ingredients, except arugula. Toss to combine.
- Add arugula to plates or bowl and top with salad mix. Drizzle with a vinaigrette and top with seeds or nuts of your choice.
