Heya fellow steemians. It has been very quiet the past week as I was preparing for and traveling to Europe to meet up with family and friends, and go to steemfest to meet up with you guys! I arrived in Belgium 3 days ago and coming from tropical temperatures to freezing point was just crazy! I didn't expect it to be so cold!
Nonetheless, I'm so happy to be here, even though I already have a cold and cough. Also, I can't wait to meet up with some of you during the weekend! One more day!
Next to being super excited to see friends and family, I'm also stuffing myself with all the food I missed in SE-Asia (Belgium chocolate and fresh berries included). So expect some more recipes with these ingredients shortly!
Ingredients (serves 4)
- 1/3 cup chia seeds
- 2 cups unsweetened coconut milk, or any other nut milk of your choice.
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 tbsps maple syrup, agave syrup or raw honey
- 1 tsp vanilla extract (optional)
- 2-3 tbsps unsweetened shredded coconut
Instructions (prep time: 5 min, chill time: 1 hour)
- Combine chia seeds, coconut milk (or other nut milk), maple syrup (or another sweetener of your choice), and vanilla extract in a jar. Close lid and shake vigorously. You could also add the pudding ingredients to a food processor or blender and pulse a few times until well combined.
- Allow to chill and form a pudding for at least 1 hour.
- When jellified, serve with berries, mint leaves, toasted coconut flakes and/or other superfoods/toppings of your choice.
Recipe notes
- If you are not the chunky fruit loving person, mix the berries in the chia seed pudding. Make sure to add a little bit more chia seeds to make sure everything gets jellified.
- Other optional toppings/superfoods: goji berries, raw cacao nibs, mint or basil leaves, seeds or nuts, etc.
- While fresh is always best, frozen berries work too. If using frozen berries, blend in pudding rather than using them as a topping. Or use other in-season fruits instead.
