Morning on my side of the world and you all know what that means... SMOOTHIE TIME! Who's up for a glass packed with good-for-you ingredients? I sure am. I'm actually getting quite excited as our move to the coast and jungle garden is coming closer.
Can't wait to serve you a morning smoothie with guava, coconut, mango, jackfruit, etc straight from the garden. Pure morning bliss. Though I haven't explored to 2 hectares fully yet, I hope with have a soursop and a durian tree too.... that would be just amazing! Love those tropical fruits.
If not I know what I'm planting ;)
Ingredients
1.5-2 cups coconut water or plain water
2 cups spinach
1 frozen banana
1 small raw red beet, washed, peeled, and roughly chopped
1 cup fresh or frozen strawberries
1 cup fresh or frozen blueberries
2 tbsp hemp hearts
1/4 fresh Italian Basil (mint works too), or to taste
1-2 tbsp extra virgin coconut oil (optional)
Directions
- Blend (coconut) water and spinach until smooth. Add other ingredients and blend again. If you have a high-speed blender you can throw everything in at once! If the smoothie is too thick, at more water.
- Optional top with superfoods such as chia seeds, hemp hearts or goji berries.
