Good morning steemit! Another beautiful, yet too hot, day has started on our side of the world. Though it supposed to be a lot cooler and rainy season, it hasn't rained in over a week and temperatures in the morning are already well above 30C or 86F... climate change at work.
But hey I am not complaining. Other parts of the world are experiencing extremer weather at the moment. Our little problem is easily fixed with an aircon. I hope you are all safe.
Inspired by this mornings early sunrise (see pic below) I give you a very pink smoothie today. No, there are no berries in there. A lot of veggies and red beets. Though my hubby prefers smoothies with fewer greens and more fruits, recently I started experimenting with making the perfect green (in this case pink) drink with fewer fruits and more veggies. And he is digging it!
Pink Vegan Glow Smoothie 🐰 🐰
Sweet, delicious, antioxidant-rich, morning drink everybody should try. Not too green and not too fruity. Found the perfect balance there!
Ingredients (serves 2-3 people)
1 stalk of celery
1 avocado
1 cup raw pumpkin, roughly chopped
Fresh ginger and turmeric to taste
1/2 cup red beet
1 cup bok choy
2 bananas (frozen for extra creaminess and to chill the smoothie)
3 passion fruits
2 tbsp extra virgin coconut oil
Water as needed
Hemp hearts (topping)
Directions
- Add all ingredients to a blender and blend until smooth.
- Optional: Top with superfoods such as hemp hearts, chia seeds or goji berries if you like.
