It's morning on my side of the world and you all know what that means.... time for a yummy green drink. Though green smoothies are nothing new, we have been drinking them for over 5 years now, every day more people are joining the green hype.
Though they might be a trendy, hipster food, they are so good for you. Especially for those who don't have much veggies and fruits in there life or for those who usually skip breakfast.
Green smoothie where they first step on my hubby's journey towards better health. For some people, it is easy to change their diet and life but my hubby wasn't one of these people so I knew I had to take things slowly with him. After successfully introducing green smoothies for breakfast for a while, his lunch sandwich started to have veggies too and after a while, he skipped the bread and went for a lunch salad or soup.
Small steps right? That's how I turned an unhealthy carnivore into a veggie and fruit-loving man that was able to get off his sick-making weekly beta-interferon injections and other meds to control Multiple Sclerosis. He hasn't felt better in his entire life all thanks to the love and food provided by mother earth!

Ingredients (serves 2 for breakfast)
2 to 3 cups bok choy
1.5 cup cold water
2 cups watermelon chunks
1 cup papaya chunks
2-3 small tropical banana (equals 1 big banana)
2 tbsp hemp hearts (optional topping)
2 tbsp coconut oil
FYI: Use one or more frozen fruits to chill the smoothie.
Directions
- Blend bok choy and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick, add more water and blend again. If you have a high-speed blender, you can throw in everything at once.
- Optional: Add superfoods/toppings - such as goji berries, chia seeds, hemp hearts or raw cacao nibs. I used hemp hearts for this one!
