Make this vegan carrot cake and you'll see why it's one of our favorite not-so-healthy treats ;) It's moist, delicious, and topped with vegan coconut lime frosting.
Even my hubby always goes for a second or even third piece when I make this. And he is not a carrot cake lover. Yes, strangely enough, they do exist. Who doesn't love carrot cake, right?
To be honest, I'm so happy we have some left in the fridge, 'cause writing this post and adding the pictures have made me hungry for more! So who's up for dessert? Or should I make dinner first.... Nah, I'll go for it now hehe!
If by any small chance, you are in the neighborhood (which is close to Angkor Wat temples, Cambodia) and quick, we have another piece left!! You gonna have to make it through the tropical rain though ;) But believe me it's worth it!
Ingredients
For the carrot cake
2 cups flour of your choice
1 tsp baking powder
1 tsp baking soda
Pinch of salt
2 tsp ground cinnamon
1 tsp ground nutmeg
2.5 cups grated carrots
11/4 cup raw palm sugar
2 chia egg (or flax seed egg, 1 egg = 1 tbsp chia seeds or ground flax seeds + 3 tbsp water)
1/2 cup olive or coconut oil (we used olive oil)
1 tbsp apple cider vinegar
1 tsp vanilla extract
For the Frosting
1 cup raw unsalted cashews, soaked
1 lime, juice and zest
1-1.5 tbsp extra virgin coconut oil
1-2 tbsp maple syrup
A little coconut milk to blend
Directions
For the cake
- Preheat oven to 350F or 180C.
- Grease cake pan with coconut oil. Set aside.
- In a small bowl, mix 2 tbsp chia seeds and 6 tbsp water to make 2 chia eggs. Stir and set aside for a few minutes to form an egg- like substance.
- In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix to combine. Set aside.
- In another bowl, mix the sugar, vanilla extract, apple cider vinegar, and oil. Mix well. Then add chia egg and mix again.
- Combine the two mixtures and stir until homogenous. Add carrots and stir again until incorporated. When the cake mix is too dry add a little water.
- Pour into greased cake pan and cook for 30 minutes in the oven or until a toothpick comes out clean.
- When ready allow to cool before adding the frosting.
For the frosting
- While the cake is cooking combine all ingredients in a blender or food processor. Process until smooth.b Set aside in the fridge.
- When the cake has cooled down completely, add the frosting to the cake. Serve or keep in the fridge for later.
