Ingredients.
- 300 grams of pork belly (cut into large cubes).
- 1 cup Coca-Cola.
- Vegetable oil.
- 1 shallot (finely chopped).
- Salt, fish sauce.
- 4 tablespoons sugar for caramel.
Instructions.
- In the bowl, mix well pork belly with 1 teaspoon salt for about 10 minutes.
- Heat vegetable oil in the pan over medium heat, add the pork. Fry well on the both side until golden. Set aside.
- Prepare caramel: add sugar to the pan on medium heat, stir the sugar so it heats evenly, when it gets darker than caramel and just starts to smoke. Add 1/2 cups of water to the sugar to halt the cooking process and stir until the sugar dissolves. You are done.
- Marinade the pork: In the pot, combine the fried pork, shallot, caramel and 3 tablespoons fish sauce. Set aside for at least 30 minutes.
- Fill up the pot until the Coca-Cola just covers the pork. Turn the heat to high for about 1 minute, then let it simmer for about 30 minutes or until sauce thickens a little (stirring occasionally). Add fish sauce to taste.
- Serve hot with cooked rice and chilli (if you like spicy).
