Ingredients.
- 300 grams pork ribs.
- 1 shallot (finely chopped).
- 2 tomatoes (cut into wedges).
- 30 grams pineapple.
- 2 tablespoons tamarin pulp.
- Green onion (chopped).
- Coriander (chopped).
- Salt, sugar and black pepper.
- Vegetable oil.
Instructions.
- Bring to cup of water, bring to a boil over high heat. When the water is boiling, add pork ribs for about 2 minutes just clean it. Drain and rinse until water is clear.
- In the large saucepan, combine pork ribs, 1 teaspoon salt and cool water. Bring to a boil and simmer for about 1 hour until soft.
- Meanwhile, heat oil in the pan over medium heat, add shallot, fry well until fragrant. Then add tomatoes and pineapple, fry stir well for about 3 minutes until soft. Add 1 teaspoon salt and 1 teaspoon sugar. Set aside.
- About 15 minutes before the cook is finished, add the stir fried (tomatoes and pineapple) into a saucepan that you are cooking.
- Add tamarind pulp and salt to taste. Add green onion and coriander on top.
- Serve hot with cooked rice or rice noodles.
Note: If you use dried rice noodles: bring a large pot of water to boil, soak rice noodles, stiriing until softened, usually about 6 minutes. Drain and rinse with cool boiled water.
