Ingredients.
- 500 grams of round scad.
- 4 fresh tomatoes (remove the skin, seeds and finely chopped).
- 6 cloves garlic.
- 1 shallot.
- 1 ginger (crushed).
- 30mls of Vodka wine or white wine.
- Sugar, black pepper, fish sauce and salt.
- 10mls of tomato ketchup.
- 1 onion (finely chopped).
- 2 tablespoons annato seed oil.
- 3 cups of coconut water.
Instructions.
- Mix ginger, Vodka wine in a bowl and set aside for about 5 minutes.
- Combine fish and ginger wine which you've just mixed. Soak for about 10 minutes just clean it. Drain and rinse till water is clear.
- In a large saucepan, add 4 tablespoons fish sauce, 3 tablespoons sugar, 1 teaspoon salt and 2 teaspoons black pepper. Mix well and marinade for at least 1 hour in the refrigerator.
- Meanwhile, prepare the sauce: Heat oil in a large pan over medium heat, add shallot and fry well till fragrant. Add tomato, annato seed oil, onion, tomato ketchup, 1/4 teaspoon salt, 1 teaspoon sugar. Stir fry well for about 2 minutes.
- Combine the sauce with marinated fish in the large saucepan. Add water coconut. Bring to a boil over high heat for about 1 minute. turn lower the heat and stew till the sauce thickens a little. Season with salt and sugar.
- Garnish with onion (thinly sliced), chilli. Serve hot with cooked rice.
