Ingredients.
- 500 grams squid.
- 4 lemongrass (cut into pieces).
- 1 ginger (cut into julienne).
- 10 piper lolot leaves (very thinly sliced).
- 1 tablespoon sugar.
Dipping sauce:
- Fish sauce, sugar, fresh lime juice, ginger (finely chopped) and chilli.
Instructions.
- Wash the squid well after removing inedible portions.
- Prepare with cool water and heat over high heat.
- When the water is boilling, steam the squid with lemongrass and ginger for about 5 minutes.
- While squid is steaming, combine the sugar, ginger, fish sauce, fresh lime juice and chilli in a bowl, mix and stir well, you have a dipping sauce.
- After 5 minutes, remove squid and arrange these on a plate, final step is add piper lolot leaves on the top.
- Serve warm with dipping sauce.
