- 2 lbs pumpkin.
- 30 mls oil.
- Salt and pepper.
- 1 onion.
- 3 finely chopped cloves garlic.

Step 1:
- Heat oven at 180 degrees celcius.
- Rinse the pumpkin, remove grains. Sliced into small pieces.
- Then pour 30 mls oil on the pumpkin. Sprinkle a little salt and pepper.
Step 2:
- Put the pumpkin in the oven, bake at 180 degrees celcius for about 1-2 hours. When you see the pumpkin tender is done.
Step 3:
- Rinse the onion, thinly slice. Fry onion with oil on the hot pan until fragrant. Add chopped garlic, stir-fry well for about 10 minutes.
- Continue to add 1 tbsp coriander powder.
- Then add 750 mls vegetable broth. Stir well until all of the ingredients mix well together.
Step 4:
- Pour the mixture into a blender. Then add pumpkin and blender until puree.
- Pour the soup into a bowl or plate. Garnish with whipping cream or coriander if you want.
