Tasty Pepper Chicken & Brown Rice
This Chinese inspired dish is a healthier, delicious, and faster version of delivery. Yes, faster than delivery, only 30 minutes from start to finish! The ingredient list won't leave you scratching your head or searching the grocery aisles:
Chicken breast
Bell Peppers (Colors of your choice)
Onion
Extra Light Olive Oil (Or Oil of choice)
Soy Sauce
Worcestershire Sauce
Pepper
Garlic Powder
Onion Powder
Cooked Brown Rice
That's it! Simple and to the point no need for fancy coatings or extra ingredients.
I enjoy a combination of a few different color peppers for some visual appear and a little depth of flavor. The onion really adds some wonderful caramelization to the dish.
Slice the peppers and onions into strips.
Place the peppers and onions in a big pan, toss in oil, and cook on high heat. If using a non-stick pan let it cook without stirring for periods of time to develop some color.
Add 1- 2 tbs of worcestershire sauce and 2-3 tbs of soy sauce. Add garlic powder and onion powder to taste. Cook onion for about 15 min and get chicken ready to cook.
Slice chicken breast in strips and coat in oil and pepper liberally to taste. Heat pan on high, I prefer cast iron to get a nice coloring and flavor in the chicken. Wait till pan in hot and drop chicken in.
Take a little snap chat break while everything cooks, but stay close making sure not to overcook the chicken.
Cook chicken about 10 mins or until cooked thru.
My go to for quick brown rice is Uncle Ben's, 90 seconds in the microwave and you have cooked delicious rice.
Add the chicken to peppers and add another little splash of soy sauce.
Now plate and enjoy!! 30 minutes from start to finish!
