Today is work free day at my Primary Place of assignment, so I have the whole day to my self unlike the previous days where I have to work from 9am to 5pm.
Waking up this morning, I and my fellow colleagues had nothing in mind for lunch until I began perceiving the smell of egg being fried by a neighbour at that time, I had the urge for Yam with egg.
I brought the idea of taking egg and yam and my colleagues too loved the idea and immediately we started making preparation by going to market to get the ingredients.
INGREDIENTS
Yam
Egg
Red pepper, Tomatoes and Onions
Salt and Seasonings
*Groundnut oil
PREPARATION PROCESS
Slice or Cut the yam tuber into desired sizes and then Peel.
After peeling wash with clean water and set into the cooking pot to be used.
Slice Onions into the yam and add water.
Set on fire and allow to boil for just few minute, then add salt to taste (as desired).
Leave on fire for about 20 to 30 minutes or until you get your desired texture (some people have passion for hard yam while some do not)
Now the yam is ready but you can put in a warmer while you prepare the egg.
In my own case I had access to another cooking space so while the yam was on fire, I was preparing my egg.
Unshell the eggs into a bowl and beat with just a pinch of salt.
Wash the pepper, tomatoes and onions and grate the tomatoes and pepper only while you slice the Onions (you can slice others too, if you desire to)
Once they are ready, set the pot or fry pan to be used on fire and add groundnut oil and heat up for few minutes then pour in the grated vegetables and fry till the moist content is reduced. Add salt and Seasonings to taste and allow to fry abit more.
Pour in the whisked egg and stirred so as to prevent it from burning and so as to mix the sauce and egg together.
Now as well, the egg is ready and you can serve with the boil yam and take with any kind of drink of your choice.
