We're still digging out sunchokes and since we've got plenty, we decided to try something new for a change.
Lacto fermented sunchokes!
It starts with washing the tubers really well. We generally wash them after digging them our but still so much soil is left on them. Look at that water!
After that we slice the tubers and mix with salt solution, 3%. We use spring water and non iodine salt for better fermenting. We also add some sliced ginger and a handful of garlic cloves.
The jar will sit in a moderate warm kitchen for a few weeks and then we'll try our first fermented sunchokes!
PS. The main reason we're trying to ferment them is to check if they give you less gas that way...
