3 eggs
1/4 green bell pepper
1/4 sweet onion
1/4 cup of shredded cheese
2 tablespoons butter or margarine
salt and pepper for seasoning
Dice the bell pepper and onion into small pieces.
Crack 3 eggs into a cup, add the remaining ingredients.
Beat the mixture together making sure the butter gets mixed well into it. .
Add butter to a skillet heat on medium. Once heated pour egg mixture into pan.
Cook each side 5-7 minutes. Your looking for a golden crisp on each side.
Put on plate and before folding in half add extra cheese if you'd like.

if you're a meat lover you can add bacon, diced ham, lunch meat, etc
This recipe can be tweaked to your families size. 3 egg omelette feed my husband, 1 year old, and myself.
Our 3 year old eats hard boiled eggs when we make omelettes.
A great side dish to add is hash-browns or biscuits.
