I hope you're having a great Sunday my sweet foodie friends! It truly is a sunny Sunday here at the Bird house.
We spent a lovely day yesterday with our sweet son-in-law
's mom. Believe it or not they have been together 7 years now and the parents haven’t met! Truly a shame, but yesterday we more than made up for it. We spent the day chatting non-stop, getting to know one another. She’s an amazing woman and we loved getting to know her. A fun day spent with extended family. She lives in Canada which makes visiting a bit more difficult but we promised one another we would make it an annual affair!
This morning we enjoyed a wonderful morning ride and now that we’re back it’s time for breakfast!
But First…
We need to make Granola! Have you made Chocolate Granola? Well if not you are certainly in for a treat! This granola is made with Organic Cacao, a rich healthy chocolate which is unprocessed unlike the popular cocoa powder. As a result of this process, roughly 60-90 % of the anti-oxidant properties of the Cacao bean are lost with traditional cocoa! Cacao powder contains 10 times the anti-oxidants of Blueberries! You know me, I’m always sharing the healthy benefits of chocolate!
And what is Manzano…
Ah yes, the Manzano! Manzano is a type of Banana. I shared this little guy in a post earlier. These bananas may be small but they more than make up for it in vitamins and taste! They contain more Vitamin C than their cousin the Cavendish Banana. Known for their apple-banana taste, be careful to wait until they’re ripe before you eat them! They can be quite chalky if eaten too early!
I know, that banana looks too ripe….but it’s just right!
So let’s make Granola…
Manzano Granola
- Manzano Bananas (qty 2)
- Gluten Free Oats (2 ½ cups)
- Cacao Powder (1/4 cup)
- Cacao Nibs (2 tbsp.)
- Maple Syrup (1/4 cup)
- Coconut Oil (1/4 cup)
- Sugar Free Chocolate Chips (1/4 cup)
- Walnuts (chopped) (1/3 cup)
Toast…
The Oats on a parchment lined baking sheet for 10 minutes at 350 degrees. Don’t turn off that oven!
Meanwhile mash…
Those Manzanos and add the remaining ingredients.
Stir in the Oats…
And pour the mixture back on the baking sheet.
Back to the oven…
For about 20 minutes or until the granola is golden brown! Yum, the Bird kitchen smelled wonderful! At this point Mr. Bird was lurking around the kitchen like a starved bird!
Now it’s time for our Sunny Sunday Parfait!
I blended fresh coconut yogurt with frozen Manzano bananas, Spinach and Spirulina powder. Don't you love creating beautiful breakfast surprises. Now layer up! Raspberries, fresh Coconut Yogurt, Spirulina blend, Granola and Bananas! Whew, what a parfait!
Voila! A delicious Sunny Sunday Parfait!
What a refreshing breakfast; light yet nourishing, definitely a great way to start the week. I’ve found this chocolate granola is wonderful with your favorite milk, as a snack, and an amazing topping for ice cream too!
