Often the simplest things are the best, and I find this is case with good quality seafood. It doesn't need much, just a few little things and its amazing.

What you'll need
- Fresh Oysters on the shell
- Sweet Chili Paste
- Fried Onion Shards
- Fresh Garlic Slices
- Krathin (the green herb)
- Nahm Phrik Pao Lime/Chili Sauce
- Fresh Limes

HOW TO MAKE

Simply take your fresh oyster and remove it from the shell. Then its entirely up to you how much you add for each of the toppings. Personally, I love the sweet chili paste and usually lather this directly onto the oyster first. I will then sprinkle the fried onion pieces over it so they stick to the paste. Drop on 1 or 2 pieces of fresh garlic. I will then break up some of the green herb and drop it on top. Apparently the enzymes from the oysters react with this herb and give it a sweet taste. Finally I will drizzle a little chili/lime sauce to suit my taste.

The resulting combination is absolutely delicious and healthy. The flavours explode inside your mouth with each bite of the fresh juicy oyster.
