The climate is getting cold at night and morning here in the Philippines, sign of the Christmas season. And the best comfort food for that is soup, so I made this very simple soup - Egg Noodles Soup.
Noodles is a very popular Asian food and way back history, the Phillipine cuisine was influenced by Chinese during Pre-colonial time thatβs why every Filipino loves eating noodles.
So, let us get directly in making my Homemade Egg Noodles Soup. It is very easy to make and affordable.
Basically, all we need is the Egg Noodles, a bought that few days ago in the supermarket.
Some veggies - green beans, petchay, cabbage, onion and garlic. These vegetable will be use as my stock.
You can add more vegetable such as carrots, celery, asparagus or any veggies of your choose to be more tasty. The vegetables above are the only available in my fridge. π
In a pot with 5 cups of water, combine and boil the sliced onion, minced garlic, green beans, petchay and cabbage. Salt and pepper to taste, and for extra flavor I added some meat patty (I also made that few days ago, frozen in the fridge).
Then in a separate pot, I precooked the Egg Noodles for 3 minutes. As well as prepared the hard boiled eggs.
I arranged the egg noddles, the hard boiled egg and the sliced meat patty from the stock before putting the vegetable stock.
And there you go, springkled with chili flakes for exciting taste. Yumm! ππ
My daugther is not a fan of vegetables thats why I choose to have the vegetable stock so that she still have the nutrients without noticing it.
It is very easy and fast to prepare for about 30 minutes you can enjoy the healthy, cheap and delicious food on your table.
These recipe was good for two persons, enough for the dinner at the cold night.
