Today we had fifty pesos left in our pockets (about 3 USD). We have been trying not to cash in Bitcoin in hopes it would go up but so much for that. So I found a way to get a jug of water, and some items to make lunch with fifty pesos until we do finally cash in the coin later.
I went to the local hole in the wall market and bought one potato, one carrot, one onion, a bag of fresh chickpeas and two burger buns. I had enough for that and a jug of water.
I made this burger from ground potato, chickpeas, carrot, rice flour, ground flax, salt, pepper, small diced onion, minced garlic, turmeric, ginger and chili flakes.
I added about one cup of rice flour and a tablespoon of ground flax, at the end, until it was firm enough to shape. Don't be fooled. The flax seeds will absorb if you let the mixture sit for a while. After letting it sit and forming patties just brown it than add a very little bit of water and cover. Unless you have an oven, then you can pop them in there for fifteen twenty minutes.
This is not the most nutritious food in the world but it is wonderfully cruelty free and delicious.
I topped it with tomatoes, onions, carrots and dijon mustard. I would have used lettuce but there is no lettuce to be found up here in the hills of Acapulco.
So bitcoin may be biting us in the bum but we won't let it bum us out. We will not cry in our beer. We will however have a beer at the beach later. Cheers!
