On this wintery adternoon here in the Perth hills there's nothing better than a hot chocolate and put your feet up near the fire.
The perfect accompaniment is this epic "brownie cheesecake"
Yes you heard right !
Brownie base with cheese cake top, crumbled brownie through the cheesecake, it is simply to die for!!
Brownie base:
185gm of butter
185gm of dark chocolate buttons
3 eggs
275gm caster sugar
1 1/2 cups of plain flour
1/2 cup of white choc buttons chopped roughly
Melt the butrer and chocolate together over a water bath. Beat the eggs and the sugar until fluffy.
Fold both batches together with the flour and add the white choclate chips.
Pour into a round spring form and bake at 180 degrees Celsius for 25 minutes
Cheesecake:
500gm cream cheese
1 1/2 cups of sugar
1 cup of warm water
6 tsp of gelatine
600ml thickened cream
1/2 of dark chocolate melted with 2 tblspoons of thickened cream ( in microwave is fine )
Beat the cream cheese and the sugar together. Disolve the gelatine in the warm water. Whip the thickeked cream until nice and stiff. Fold the cream cheese mixture with gelatine and whipped cream mixture. Fold in the chocolate mixture and pour into your spring form after the brownie is baked and put into fridge to set.
