Many years ago my mum would always make this at home for when we had lots of people over. She always cooked so much food, you would never leave hungry!
I put this on most of my menus as it's a brilliant lunch salad for anytime of year. You can put any meat with it and it just works. It has a very punchy vinegary flavour. Really gets your taste buds watering.
For this salad you will need good starchy potatoes. I love royal blue potatoes, they remind me of the nice yellow spuds you get in Germany.
I dice these up roughly and then fry them off which gives them a nice crunchy texture. It also laminates the colour and they stand out once they are in the salad.
Meanwhile I boil off some eggs, then cool them under cold water which will make them easier to peel.
Once they see peeled I'll put the diced potato in a large bowl with 1 diced red onion, 5 savoury pickles diced, salad cream, red wine vinegar and then grate the egg into that.
Now mix this all together whilst adding a good dash of salt and optional chopped chives or parsley for more colour.
The end result is to die for !!!

4 royal blue potatoes
5 eggs boiled
2 glasses salad cream
2 tablespoons red wine vinegar
2 savoury pickles
1 diced red onion
Season to taste
