I feel like curry tonight but not really keen on to much meat this evening..... I want something fresh, fast and easy.
And this is it.
This ticks every box if you want something quite gourmet but easy. This is my yellow curry with some fried tiger prawns and a few chopped up baby potatoes, avocado with lemon dressing and finished with my spiced sour cream
To make the curry sauce you with need a red onion finely diced. a few table spoons of yellow curry powder, stones ginger wine which you can find at your local bottle shop, coconut cream and normal whipping cream and thats it.
Fry off the diced red onion, add the yellow curry powder and then hit it with the ginger wine. Reduce briefly then pour 1/2 a coconut cream tin and around 200 mls of whipping cream. Bring to the boil, add a few pinches of salt and bang! Your ready.
You can either fry the prawns on the side or add them into the curry and stew them in the sauce.
This is great with a glass of white or a beer and i like this all year round!
