Besan Barfi or Besen Chakki ( Gram flour fudge) is a very famous north Indian dessert. Like most of the Indian dessert, traditionally it is also a non-vegan recipe but as usual, I made its vegan version. There are some different methods to make it at different places but the taste is almost the same everywhere depends on the ratio of ingredients used. The main ingredient of this recipe is gram flour, sugar, and oil
Ingredients-
- Gram flour 2 cups
- Vegetable oil 2/3 cup ( I used rice bran oil as it has no specific odor and taste)
- Powdered sugar 1cup ( Here I used unrefined sugar)
- Dry fruits of your choice
- Cardamom powder 1 tsp ( preferably black cardamom)
- Water as required
Procedure-
- Mix oil and gram flour in a pan and bake at low flame. Stir continuously.
- After 20-30 minutes its color will change and a pleasant aroma of gram flour will start to come. At this stage switch off the flame and let it cool down.
- When it is cool down 50% add powdered sugar and cardamom powder.
- Add some water to make a lump like formation. Add water very slowly. A little water will be required.
- In another method instead of adding sugar directly, a concentrate sugar syrup is prepared and baked gram flour is added.
- Spread this mixture in a tray and garnish with chopped dry fruits.
- Cut in the desired shape.
