Chickpeas are an excellent source of protein for vegan. There are so many recipes of chickpeas in Indian cuisine.
Chhole (छोले) is a famous indian curry, delicious and healthy.
Here I made "Roasted Spicy Chickpeas" ready to eat anytime anywhere and an excellent tea time snack.
It is very easy to prepare and low calorie snack. very few ingredients required to make it. Chickpeas, spices like turmeric powder, red chili powder, salt coriander powder etc. lemon juice also added to make it tangy and little oil to help it bake properly.
Method -
Soak chickpeas in water overnight or for about 8 hours.
Drain water.
Cook in pressure cooker with 3 times fresh water.
Cook on medium flame until 3-4 whistles.
Remove water (this can be used to make vegan whipped cream).
Add spices – turmeric powder, red chili powder, salt, coriander powder.
Mix well.
Add lemon juice and little oil.
Mix again and preheat oven at 150 degree.
Bake at 150 degree c for about 40-50 minutes or until it become crunchy.
