In the winter season, there is nothing better than this if the day starts with a hot and delicious breakfast. There is a lot of hot breakfast options and one of them is Scrambled Tofu. It is vegan, rich in protein, calcium and other nutrients.
Ingredients
- Tofu - about 200 gm for 4 servings
- Onion - 1 medium
- Tomatoes - 2 nos medium sized
- Green chili - 3 nos
- Cashew nuts - 1 tbsp (optional)
- Vegetable oil - 1 tbsp
- Lemon juice - 2 tsp
- Fresh coriander leaves for garnishing
Spices- Turmeric powder 1/2 tsp. coriander powder 1 tsp, cumin seeds 1/2 tsp, mustard seeds 1/2 tsp, red chili powder 1/4 tsp, asafoetida a pinch, Himalayan salt as per taste, oregano 1/4 tsp (optional)
Procedure
- Grate tofu
- Chop onion, tomatoes, green chili and, coriander leaves.
- Heat oil in a pan and saute all spices, cashew nuts and, chopped ingredients.
- Add Grated tofu to it and mix well.
- Garnish with chopped coriander leaves and add lemon juice.
Serve hot with the bread of your choice.
