I Love Trying New Recipes
Meat is getting really expensive and I wanted to stretch the dollar so I decided I wanted to cook a dish that used some lower cost ingredients. One of the lowest cost vegetables that I know of are good ol' potatoes. So I decided to try out this great looking recipe. I will admit, mine didn't turn out as pretty as the ones on pinterest but I thought it was pretty good.
Ingredients
- 1.5 lbs chicken
- 1.5 onions diced
- 8 oz sliced mushrooms
- 10 potatoes diced (I could have used more potatoes)
- 1 can cream of mushroom soup
- 1/2 can chicken broth
- 3/4 cup of milk
- Enough Olive Oil To Brown The Chicken
- 2 cloves chopped garlic
- Parmesan and Mozzarella Cheese
All To Taste
- Salt
- Pepper
- Rosemary
- Thyme
- Garlic Salt
- Oregano
Directions
First I heated up some olive oil in a pan. Place the chicken in the pan 2-3 minutes each side until they are crispy golden brown. Used thawed chicken for this.
-Preheat oven to 400f.When chicken is browned (doesn't need to be cooked all the way through) set aside.
Add garlic and onions and just a splash of chicken broth to the pan. Saute 2-3 mins until onions are see through. You want to add just enough chicken broth so that in evaporates quickly and you reduce the flavors into your vegetables.
Add mushrooms and cook 2-3 minutes doing the same thing with the broth.
Add potatoes and cook 2-3 minutes doing the same thing with the broth.
Season this mixture as you please. I used almost all spices at all stages of the cooking here. I seasoned the meat, the vegetables and the sauce. The rosemary and thyme will leave and wonderful fragrance throughout your house!
When all vegetables are soft, remove from burner and set aside to cool. Mix your can of cream of mushroom and milk and wisk until blended.
You can now mix the sauce with the vegetables.
Take a large baking dish, spray with nonstick and place the chicken on the bottom. Pour the sauce and vegetable mix over the chicken.
Bake 20-25 minutes at 400.
During the last 5 minutes pour some grated parmesan and mozzarella on top and heat until melted.
Serve and enjoy! I will be cooking this one again.
