Today I made the famous Moroccan dish, the chicken tagine with green olives and preserved lemon, Which I served it with french chips, really it so delicious , the mixture of olives and preserved lemon and some Moroccan spices give a good flavor, and when you cook it in tagine , it is not like the pressure cooker, the tagine is the more healthy and the more tasty.
So I will not talk so much , I will give directly the recipe:
INGREDIENTS:
- 7pieces of chicken
- half preserved
- coriander
- 3 big onions cut in small
- 4 cloves of grated garlic
- teaspoon of ginger powder
- teaspoon of black pepper
- tablespoon of turmeric powder
- 1 cube of knorr zaefran (or replace it with little food color + zaefran)
- olives oil + vegetarian oil
- little of salted butter or Moroccan smen
DIRECTION:
Cut the coriander in Small and add the garlic +smen + the pulp of preserved lemon + ginger+ turmeric +Black pepper + zaefran + cube of knorr + olives oil+ and vegetarian oil.
Mix all the ingredients well in bowl and put the chicken pieces in the marinade.
Marinate them well and let them for 10 minutes.
Put the onions in the tagine with little olives oil and vegetarian oil and stir them until change the color of onions, then add the marinated chicken, and put the olives and the skin of preserved lemon which we keep it before, add little of the water and let all cook .
Every 15 minutes you have to check the tagine, if dry put little water and cover it until cook.
So the chicken tagine ready!!!! I served it with the Moroccan bread and some french chips, really is a super delicious!!!
