Today I decided to cook one famous Moroccan dish, I don’t think that someone didn’t know it! It’s the traditional Moroccan couscous with seven vegetables, and to enjoy this dish you have to be with the family , because ca not to cook it just for one person,
That’s why it’s long time I didn’t cook it, but today am with my aunt who lives in Mauritius, yesterday I visited her and I stayed with her until today , I decided to cook this Moroccan dish to enjoy it, especially it’s Friday, the most of the Moroccan cook it on Friday.
Unfortunately my husband he didn’t like it, because he likes to eat rice .
So to prepare this healthy and yummy dish you need :
INGREDIENTS:
- 500 gms of couscous
- 700 gms of meat
- 1 tablespoon of smen (clarified butter)
- 2 tablespoon of vegetable oil
- 1/3 olives oil
- 1/2 tsp of turmeric
- 1 tablespoon ginger powder
- salt
- 1/2 tablespoon of pepper
- 1 large pinch of saffron
- half calabash
- 3 carrot
- 2 aubergine
- 3 Small potatoes
- 3 turnip
- 500 gms of pumpkin
- fava beans
- 2 tomatoes
- 3 onions
- 1 bunch of parsley
- 1 bunch of cilantro
- coriander
- green chilli
DIRECTION
- step1: prepare the vegetables:
- peel and slice all the vegetables in large pieces.
- to cook the meat and vegetables you need a Moroccan couscous Pot, you will use the bottom piece of the pot to cook the meat and vegetables, and the top perforated part to cook couscous.
- place the meat, oil , spices, tomatoes and onions in the bottom pot.
- cover the pot and cook on medium heat for 10 minutes after add the following vegetables: cilantro, parsley, carrots, aubergine, turnips, fava beans.
- add 2 cups of water and let all cook on medium heat for 40 minutes.
step2 preparation of couscous: - while the meat and vegetables cook prepare the couscous.
- mix the couscous with the oil and water.
- add the rest of vegetables: pumpkin, potatoes, calabash, green chilli.
- place the couscous in the top section of the couscous pot, place on the top of the section of the pot that contains the vegetables, cover and cook until you see steam coming up from the couscous.
- remove the couscous from the couscous pot and place in a large bowl.
- add salt to taste and 1 cup of water and mix.
- return the couscous to steam again for 15 minutes.
- remove the couscous from the pot once again and work the couscous with the smen.
- serve the couscous by setting the couscous grains first in a dome, adding some sauce to the couscous , then adding the vegetables on the top of the dome and around.
Voila the traditional Moroccan couscous with seven vegetables are ready!
