Here is what you will need to make The ULTIMATE Blueberry Crepe Cake. A Crepe Stack so large you might feel guilty eating it all... might 😆

Blueberry Crepe Cake by Dish Everyday
INGREDIENTS 🍉
2 cups - flour
2 jumbo - eggs
¼ cup - oil
2 tbsp - vinegar
2 tsp - baking powder
3 cups - water
1 cup - blueberries
½ cup - water
½ cup - sugar
¼ cup - lemon juice
METHOD 🍳
In a bowl, whisk together flour, eggs, oil, vinegar, baking powder & water.
Rest Crepe batter while moving along to the next step.
In a nonstick skillet, add the water, blueberries, sugar and lemon juice.
Bring up to a simmer until blueberries have broken down into a sweet sticky sauce.
Remove from heat and leave aside to cool down.
In a small nonstick skillet add a portion of the batter to form a thin layer.
Once the bubble starts to surface, flip the Crepe over to the other side.
Golden delicious is the ideal colour.
Stack Crepes one on top of the other and slices out the middle with a round cookie cutter.
Pour the Blueberry sauce into the middle and cover with one last Crepe
Lastly, give it a good portion of whipped cream and enjoy The ULTIMATE Blueberry Crepe Cake
