If you like casseroles, Lori made a great one the other night. She called it Bruschetta Chicken. Even though she says it was easy to make, you can taste the love that was put into this dish. Skinless boneless chicken breasts were diced up and seasoned with salt and pepper. The crunchy top was created by adding a box of Stove Top Stuffing, which was mixed with garlic and diced tomatoes. A variety of cheeses were melted in, which you could purchase as a single package by Kraft. Asiago, Mozzarella and Provolone were a major part of the variety. It was topped off with Parmesan cheese. Then, it just gets put in the oven at 400 degrees for 30 minutes.
She doesn't remember where she found this recipe, but I know she tweaked it to her and my liking. You can also spice it up a little bit with red pepper flakes or some other seasoning if you prefer your dishes to have a kick to them. Lori must have thought I was crazy when I took a picture of the finished product. I love to experiment when I cook, but this dish is perfection. So much so that if I attempted to make it, I don't think I would change a thing.
