When some people hear eggplant and pizza in the same sentence, they cringe. But I enjoyed this tasty pie at The Waterfront in Forked River, New Jersey, at the beginning of the summer. Visiting their website recently, I noticed that this particular pie was no longer on the menu. That is too bad, because it was awesome!
I guess it wouldn't sound so bad if you think of it as an eggplant parm meal. The pizza was topped with plenty of gooey cheese. Trace amounts of sauce were found underneath all that gooeyness. I usually love plenty of sauce, but this method worked out well for this pie. The fact that the eggplant was breaded was a definite plus.
I just happen to be a fan of Eggplant Parmigiana, so I guess that helped in my love of this dish. It didn't hurt that I was sitting outside enjoying all of the wonderful scenery. This landscape included being right on the bay. Even though I can't swim and having been raised in the city, this boy does love being by the water. Maybe next time, I will talk about another flavor that I love that everyone around me hates, Hazelnut!
