While Lori and I were at the Cheesecake Factory in Freehold, New Jersey, we were very happy to see that they prepare their Stuffed Mushrooms appetizer the way we like it. All too often, we will find a restaurant that stuffs their mushroom appetizer with cheese and fall in love with it. Then, upon returning to that restaurant, we find out that the stuffing has changed to crabmeat. While I personally have nothing against crabmeat, the cheese stuffing will always be in our opinion the bomb!
This particular dish was made with Fontina and Parmesan cheese. It also contained garlic and herbs in a wine sauce. Utilizing the spoon that this dish is served with to drizzle some of that extra sauce on top is the way to go. Lori has made her version with Asiago cheese which also works but with a stronger cheese taste.
