whole baramundi or telapia, scaled and guts removed, washed and pat dried
flour
salt
oil for deep fry
For sauce:
cooking oil
minced garlic
fresh red chili, chopped
sugar
tamarind pulp
fish sauce
For Garnish:
cilantro
fresh ginger strips
fresh red chili strips
Make 2/3 deep slits on both side of fish. Apply salt and flour then deep fry the fish. Drain excess oil placing on kitchen towel.
Heat 1 tbsp oil in a pan. Saute minced garlic till fragrant but not too brown, add in chopped red chili thn saute 1 minute. Add sugar and tamarind pulp followed by fish sauce. Stir, taste to adjust sweet n sour and seasoning. Cook 2/3 minutes, the sauce is ready.
Lay the fish on the serving plate. Top up sauce over the fried fish.
Garnish with ginger, red chili and cilantro.
