What do you like to eat on a rainy day? Soup! :-).
This is a known Indonesian soup. Not only known by Indonesians but many Dutch people know Soto Ayam.
It takes a lot of time and preparation, but worth the taste.
Ingredients
2 chicken legs with back bone
1 large onion
10 cloves of garlic
2 Tbsp lime/lemon juice
4 Tbsp sweet soy sauce
3 Tsp salt
3 x 0,5 Tsp turmeric powder, (if you use fresh, cut 6 cm).
2 Tsp white pepper
2 chicken broth blocks
8 Kemiri nuts( don't eat them raw!)
2500 ml water
4 salam leaves
2 lemon grass
10 lemon leaves
6 pieces of ginger
8 pieces of galangal
2 spring onions (chopped)
handful of chopped celery
9 boiled eggs
400 gram glass noodles( boil for 4 minutes)
300 gram sprouting ( boil for 2 minutes, don't eat them raw!)
5 large potatoes cut in cubes, boil later with the soup at the end.

Prawn crackers
Step 1
Wash the chicken and boil it in water about 3500 ml or more. When the chicken is ready( falling of the bone), you need 2500 ml of the fresh chicken broth( the water you just used for cooking the chicken). If it is not enough, you can add water so it will be 2500 ml. Remove the skin and bones, make the chicken in small stripes using your fingers.
Step 2
Mix onion, garlic and Kemiri nuts using a food processor.
Step 3
Take a pan, add a bit of sunflower oil and fry for about 15-20 minutes together the:
Onion
Garlic
Kemiri nuts
Ginger pieces
Galangal pieces
lemon grass( chopped in pieces)
salam leaves
lemon leaves
white pepper
turmeric powder
salt
When the mix is done, add it to the chicken broth together with the chicken broth blocks, spring onions, sweet soy sauce and lime juice. If you don't want to use chicken broth blocks, you can leave it and add extra salt instead. Boil the soup another 20 minutes
Now add the potato pieces into the soup and boil them for about 15 minutes.
Drain the potatoes. You can put the potatoes in a plastic box or leave it in the soup. I prefer to have it separated, so when I boil the soup the next day, the potatoes will not be too soft. So basically what's in the soup is just the mix that you cooked before.
Serving
When serving you add first soup in your bowl and add egg, chicken stripes, sprouting, glass noodles, celery, potatoes and prawn crackers. If you like it spicy like me, you can add fresh chillies! You can eat it with or without rice.
