I'm not even kidding. It changed my life and my waistline. Plus it's super easy, none of that double/triple/quadruple dipping bullshit.
- 1 pound chicken tenders (no cutting required)
- 1/2 tsp salt
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 egg
- 1/2 cup flour
- 2 more cups flour
- 1/4 cup milk
- frying oil
Mix all the ingredients except for the extra 2 cups of flour. You should end up with nice thick batter - just throw the chicken in there for as long as you wish. It honestly does not matter. Stop overthinking. Use less cayenne. Use garlic instead. No one cares.
Heat up lots of oil in a pan. Place the 2 cups of flour in a big bowl.
Now comes the important part.
Take each piece of chicken, hold it by one end (with a fork, tongs, fingers, whatever) and DO THE WIGGLE. You literally need to wiggle it in the bowl of flour, sort of back and forth, rubbing the batter against the flour - it will form a funny wrinkly coating. That's it - the worse it looks the better! Throw the chicken into the hot oil and make sure you don't play around with it too much - turn it once or twice. Fry until ready (duh).
The floured batter will turn into beautiful crunchy layers of instant artery clogging goodness.
