We're giving thanks for another lovely day in the Garden of Eden and another lovely feast!

For the full time volunteers that live here, we prepared a delicious, nutritious meal in our sustainable outdoor kitchen today! It's a bit gray and rainy here, which means it's perfect soup weather! We made a rich and flavorful sweet potato soup, a bright cucumber salad, sautéed vegetables, and aromatic and fluffy brown basmati rice for today's feast.
Today's soup was not only delicious and unique, but it was also super efficient - yesterday we made an enormous pot of vegetable soup over our handmade rocket stoves and only ate half of it. We blended the other half with spices like cinnamon and nutmeg to give it a completely different taste and texture for today's feast! It's like 2 soups for the effort of 1!
The flavors married overnight, and today we simply reheated the creamy, rich, decadent sweet potato soup. Then we danked it up for serving with crumbles of feta cheese, chopped cashews, sweet & chewy dried cranberries, and some fresh chives from the garden. It was super sophisticated but very easy!
We had some cucumber salad left over from yesterday too that got more flavorful as the veggies marinated in the simple dressing of olive oil & our homemade strawberry vinegar.
Our chef made a perfect pot of fluffy brown basmati rice with lots of spices & flavors including a cinnamon stick and onion.
We served some yummy sautéed veggies over the rice. This is a nice medley of broccoli rabe, onions, and colorful bell peppers with garlic and some liquid aminos.
It was a delicious, healthful, high vibe feast with plenty of food for everyone to have as much as they wanted!
Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food!
