Don't have time to make breakfast before leaving for work? Or....? Overnight oats is a quick way to produce a grab and go breakfast on the run.
The nice thing about these oats is that you can make them anyway you want. You can eat them like cold cereal or just heat them up for a warm breakfast. You can add anything that you like to them as well, like fruits and nuts, etc...
Here is a variety that I made to take to work the other day. Regular oats, soy milk, frozen blueberries, banana's and strawberries.
I also added a little agave syrup to sweeten it up a bit and some chia seeds for antioxidants, protein, omega 3 fatty acids.
I have made them with quick cooking steel cut oats as well. (From Bob's Red Mill) This type is better when you heat them up before eating in the morning. A dab of butter also gives them a richness and added flavor. Some may also like to add a pinch of salt.
A close up of the quick cooking oats. If you have ever cooked regular steel cut oats, you know how long it takes. These are just cut up into smaller bits which makes them cook faster.
This is after 12 hrs or so in the refrigerator (overnight)
Top with fruit of your choice, in my case a banana and strawberries. Freshly ground coffee beans and and pour over rounds out the breakfast.
