Like most nights, apart from the huge thunder & lightning storm happening outside... i couldn't sleep... So decided I would go into the kitchen ... at 2am, and do some dishes, or walk around the table 100 times. It takes a lot to be able to just "get up and go" as i am partially disabled (missing part of my foot & a toe), but i use a walker to balance as i walk, moon boot strapped to my right leg. and off I went. I sat on the walker and started to do dishes, then when i was covered in enough water and bubbles I decided I was hungry... Being Diabetic i have to be careful with everything I eat, but this was one of those brainwaves I had to try... I grabbed a huge zip lock bag, added Nutri grain cereal (you could use chex but we don't have them in Australia) added a heap of unsalted mixed nuts including pistachios, almonds, then sultanas, dried banana chips, popped a bag of microwave popcorn and then let it cool, added that to the bag (I made 4 bags so quartered all the ingredients) added pretzels.
Best thing is you can add any cereals you want, any dehydrated berries or nuts, just use your imagination!
