Although his origins are deeply rooted in Calabria in southwest Italy, Chef Anthony Genovese spent much of his early childhood in France where he also first embarked on his culinary education. After attending the Ecole Hoteliére de Nice at the age of sixteen, Genovese worked in several Michelin-starred restaurants including Château Eza Restaurant on the French Riviera. In 1997 he took the role of Head Chef at the restaurant Rossellinis in the Hotel Palazzo Sasso, in Ravello. Here he earned his first Michelin star and commanded a kitchen rooted in tradition but also combined with an artistic flair and a devotion to high-quality ingredients.

In 2003 together with his colleague Marion Lichtle, Genovese decided to open a new restaurant of his own in Rome. Il Pagliaccio was influenced by his travels, both in the decor and in the food. Yet this restaurant's menu is ultimately an Ode to Italian gastronomy. Over the past ten years, his culinary excursions in the capital city have garnered Genovese two Michelin stars.
