How to Happily Get Stuffed on Tomatoes!
I remember once when I was a small child in England, we used to have this GIANT market every Saturday and when it was over a lot of the fruit and veg vendors would throw their goods on a heap. Myself and 2 friends would wait for the market owners to go, then run as fast as possible over the field and grab multiple crates of tomatoes and cucumbers!
Boy I'm serious when I say life was good back then! We would find a hiding place, stuff ourselves with tomatoes and cucumbers, lay in the sun and rest with big smiles on our faces.
That was the late 70's, I was 5, and to be honest I can't even believe that I was alive back then, it seems so long ago.
Looking back life was like a film, coppers would walk the housing estates just to make sure everything was ok and everything was ok. The streets were full of kids playing soccer and other street games.
Ingredients
Things you'll need:
- 6 Giant Tomatoes (We grow our own and I really suggest that everyone even you start to do this, it's changed our lives and is so easy to manage, even without a garden! You can use pots.)
- 75 grams venere rice
- 75 grams jasmine rice
- 1 cup pitted black olives
- 1 cup artichokes in oil
- 1/2 spoon spirulina or other natural green colour
- 2 spoons pesto (add more for a richer taste)
- Salt and pepper

Directions
The How to Make Part:
- Boil the rice separately, start by boiling the venere rice as it takes a lot longer, at least 30 minutes (but it's worth it!). Jasmine rice usually takes about 10 to 15 minutes, so for a much better tasting dish be sure to keep an eye on the clock, timing is key.(cooking the rice correctly will make all the difference).
- Pre-heat the oven at 200°
- Once you have boiled both kinds of rice, place the Jasmine in a bowl, add the spirulina, pesto, salt and pepper, stir and set aside.
- Finely chop the olives, artichokes and place them in a bowl with your venere rice, add salt and pepper and stir well.
- Chop the heads of the tomatoes with a bread knife as not to squash them (Remember they're hot so be careful!).
- Remove the inside of the tomato with a spoon and a knife if needed, paying attention not to break them (Pretend you're a zen master, be patient and gentle)
- Fill 3 tomatoes with green rice and 3 with black rice, close the tops and place in the oven for 20 min.
- Make a photo and show others your excellent cooking skills before chomping down on a seriously good dish.
- If it's warm outside, eat this cold and it shall cool you down. If it's cool then, this is perfect to warm you up from the inside if eaten hot.
Just remember: Knowledge is knowing that a tomato is a fruit, wisdom is not putting it in a fruit salad :)
