This lavender lemon tart was a treat I snagged from a restaurant called Big Fish in Calgary, Alberta, Canada. It was served like a slice of pie topped with whipped cream and a raspberry drizzle with fresh raspberries topped with a mint garnish. My first bite was filled with the tart lemon flavor followed by a subtle lavender after taste. The crust encasing the tart was thick and more chewy than crisp.
The whipped topping was creamy, fluffy and light in my mouth and the raspberries and drizzle were the perfect balance of sour and sweet. The raspberry drizzle was a great addition to the lavender lemon tart when added to a bite, the raspberry paired with the lemon-lavender filling was a fruity sour delight! My criticism would be the tart crust needed to be more crisp and not chewy, also the crust itself was too thick. The filling itself was more of a gelatin type of custard and would have been better with a slightly looser texture.
Over all I would give this dessert a B+ the flavors were spot on. With a few texture corrections this dessert would be an easy A!
