Sofia, my stepdaughter, is with us at the moment for the school holidays so it was a perfect opportunity to make her and my husband happy with a typical recipe from Brazil.
Best served warm from the oven, pão de queijo are crisp and fresh on the outside, cheesey and soft on the inside. I haven't met anyone who didn't enjoy Brazilian cheese bread.
Ingredients: 1 Muffin Tray for the oven, 250ml whole milk, 250g unsalted butter, 2 eggs, 300g tapioca flour (fellow aussies, you can find this one - called Tapioca Starch - in Coles in the international aisle), 2 eggs, 1 tsp salt and 100g grated parmesan.
1. Grease the muffin tray up with butter and preheat your oven to 200 degrees celcius.
2. Add your milk, butter and salt to a saucepan and bring to the boil on the hob.
3. One the liquid has reached a boil, switch off the heat and add in your tapioca flour, giving it a really good stir! It will probably look a little like this:
5. Final step for the dough! Time to add the cheese! Mix again!
6. The fun part: adding the dough to the baking tray. You can do big size or small size, we decided to experiment with a mix of 2 different size trays this morning!
7. Bake for 20-25 minutes in the oven! Until golden and crispy on the outside! Eat when warm!
Yum! These little bites of cheesy goodness are so delicious, so be prepared to see them disappear from the breakfast table in a matter of minutes!
Amazing on their own! But can also be paired with some cream cheese or even a little ketchup!
