You know I have been teasing you into these big ol' bowls filled with deliciously nutritious goodies (and to be honest, it all started with me trying to cut down on my dishes!) 🤣
Lockdown is the perfect time to start adopting healthy practices and I always say, food is one of the best places to start when it comes to getting onto the health and wellness train headed for your brightest, best future!
Come on board!
OK, you should trust me by now not to steer you down a path of flat greens and raw carrots... I'm here to make this easy! Taste is important, texture is important, balance is important, and don't worry, it's all covered here so come along and taste this super protein rich bowl the next time you're hungry!
Note: if you don't have all of these ingredients, improvise! It's all about creating a big bowl that holds what you like to eat (that's healthy and nutritious for you as well!)
What You Need:
Salad:
- 1 beefsteak tomato (cut into chunks)
- 1 cucumber (cut into chunks)
- ½ yellow bell pepper
- 1 bunch of spinach
- 1 cup shitake mushrooms (or mushrooms of your choice)
- 1 cup tempeh
- 1 tbsp bragg’s liquid aminos
- 1 tsp coconut oil
- ½ tsp cajun spice
- ½ tsp pink Himalayan sea salt
- 1 avocado (diced)
- 2 tbsp sauerkraut
- ¼ cup vegan cheeze
Dressing:
- 1 bunch of cilantro
- ½ cup coconut yogurt
- 1 cucumber
- ½ tsp pink Himalayan sea salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
What To Do:
- Start by washing and spinning your greens (spinning removes the water from washing)
- Cut up the tomatoes, cucumber, bell pepper and avocado
- In a big bowl, start with the spinach and add in the cucumber, tomato, avocado and bell pepper pieces
- In a skillet on medium heat, fry the mushrooms and tempeh in the coconut oil, spices and Bragg’s liquid aminos
Cook together, covered until you get the desired crispiness you want! (Mine took about 8-10 minutes.) Set aside to cool. - In a blender add in all of the dressing ingredients and blend together well. Add a bit of water if you want it to be more “runny”/”liquidy”
- When the mushroom/tempeh mix is cool, toss it on top of the salad
- Pour the dressing all over everything
- Toss some sauerkraut and vegan cheeze and sauerkraut on top to perfect it!
