The time has come for some classic pumpkin soup.
Ingredients
1 Pumpkin (1.5 kilo)
2 Onions
3 Garlic cloves
250 grams carrots
2 Bay leaves
3 Drops tabasco
Nutmeg (according to taste)
Salt and pepper (according to taste)
Vegetable broth
Instructions
Cut the pumpkin into slices. Remove the seeds, the stringy inside and cut off the skin with a sharp knife. Cut the pumpkin into large pieces. Slice the onion and garlic. Peel the winter carrot and cut it into slices.
Heat the oil in a large pan and fry the pumpkin, winter carrot and onion for 5 minutes. Add the garlic and bay leaves. Pour in the water (1liter) and add the bouillon tablet. Bring to a boil and let everything cook for 30 to 60 minutes.
Remove the bay leaves. Puree the soup with the hand blender and season it with tabasco, pepper, salt and nutmeg. Stir in the crème fraîche with a spoon so that it becomes smooth. Spoon the soup into deep plates or bowls and add a spoon of crème fraîche.
