Yes, beans really are a superfood 👍 It's got so many important nutrients in them as you've mentioned , and as a person on a plant-based diet I believe that it really is an important food for us.
I find it very useful for myself to soak the beans in water for a few hours before cooking them, or even soaked overnight. It helps a lot with my digestion and doesn't cause flatulence. But doing this does strip it away of some of its nutrients, so I just make sure I also use that same water it was soaked in to cook with, or just do a slow cook instead.
